(Coconut cacao date rolls)
1lb of medjool dates (pitted)
1/2 c unsweetened shredded coconut
1/2 c Raw cacao or cocoa powder
Blend on high using tamper stick if needed until mixed well. About 30-45s.
Remove “dough.” Roll bite sized balls on a plate prepared with 1/2 cup shredded coconut. Roll in coconut and enjoy!! Makes 25 bite sized rolls.
Serve with our vanilla ice cream!!
Buckwheat pizza crust/flat bread
This is an Awesome option for those avoiding grains and gluten. Parchment paper is a must!!
2-3 cups Soaked and sprouted buckwheat groats**
1 tsp. Salt
2-3 tablespoons olive oil
1-2 tablespoons raw honey
Garlic powder/1 clove garlic
Basil (About a tablespoon)
Oregano(about a tablespoon)
Optional: 6-7 sun dried tomatoes
Place all the ingredients in the Vitamix. Blend on high for 15-30 seconds or until batter is smooth.
Pour batter onto parchment paper on a flat cookie sheet.
Bake at 400F for about 10 mins then remove, add sauce and toppings of choice!
The batter will rise a bit on its own or to thickness you poured on cookie sheet. So thinner crusts or thicker crust is up to you.
Place topped pizza back in the oven for 7-15mins!
Toppings we enjoy: marinara sauce, pesto sauce or garlic cream sauce, spinach, onion, mushrooms, red bell pepper and chopped broccoli
For a quicker crust for dinner you could just add the raw organic buckwheat grouts and pure water.(enough for a dough like thickness) Then follow recipe as if you soaked them.
For flat bread/cracker, a thin layer poured on parchment paper on cookie sheet in the oven for 12-15mins.
**Just soak raw buckwheat grouts in a bowl with pure/filter water enough to cover it well for 4hrs. Or overnight. Just drain and rinse groats with clean water throughly before use.
